I learned a long time ago to look around and watch them make a drink or two to determine if I'll even order.
Key items:
  • Stean wand clean?
    Portafilter kept in group?
    Bean hopper excessively oily?
    Beans ground for each shot?
    Shots pulled in 5 seconds?
    Do they seem to care about the drink they are making?
    General cleanliness
I've found if they fail anything on this list the shots are not worth having. I've also had everything look good but the beans they use are bad or the shot temp is way off.
