Roast class said to shoot for 6-8 months in a conditioned space preferring grain pro bags. Probably matters more with some beans more than others I would think.

I've been going through my really old (10+ year) green coffees that have been vacuum sealed in half gallon canning jars and am surprised by how well they've held up after all these years, but I'd recommend using up green coffee within six months to a year for best results under normal conditions.

I just tried to roast various beans I purchased 5 years ago or even more. They were shelved in my kitchen cabinet, not in the freezer. Actually, espresso is still drinkable, even though it is mediocre. The body is not there, no fragrance and some funny notes of acidity. I used it mostly to season my new grinder, but I sampled it, of course. Again, not the best coffee in my life, but you can get something like this in a supermarket.

I guess the degradation is continuous, it becomes worse every few months, but it is not that one cannot drink it at all.
