I just watched again and was wondering other's thoughts on the screenshot below:




I'm right there on all but Delta Span and Sampling. I have been using 12 and 2 as per my reading here.

I played around a bit with those looking at past roasts and my DSpan could be 10 and it would be better, 8 and it would be better but I would have to be less trigger happy with gas adjustments and 6 seems to make it all a bit too noisy. As for sampling I think I remember Marko and others saying that 2 was likely the best setting.

I am using 3.2mm RTD's and based on the curves in this seminar having a charge temp and turning point almost identical to mine on similar roasts, I would hazard a guess that they are using the same.

So a shorter Delta Span makes the spikes worse and earlier and any change in Delta Span makes comparing fit to curve analysis incompatible with past roasts at different settings. I'm just rambling here so I'll stop and wait hoping to learn some more from y'all.
