Why did he say to use the v filter instead of the flat bottom filter in the Breville? I prefer the flat bottom filter.

The bed depth is greater. Given the quantity of coffee that he brews, the flat bottom won't be deep enough for currently-held ideal levels of extraction.
In my experience (not with the Breville), the inflection point for batch brewing (>0.5l) is around 1l - 1.5l. Below 1l, I'll use a Melitta-style filter. Above 1.5l, I'll use the standard (Bunn?) flat bottom filter.
