Brew ratios with Acaia Lunar and Bezzera Strega (or similar).

Have a Strega, have a lunar. Wondering if anyone has any tips on pulling shots using the Lunar? i.e. Without pouring espresso all over the Lunar at the end of the shot?

brew ratio? most of my shots (5-8 per 'session') are 1:2, so 50%, for 19g or 20g in;
I am using a small cheap scale (7$) and I cannot see a problem in withdrawing both the scale and the cup when the target weight is reached (!?)
however, there are shots now and then, when I am stopping the pump on the pressure ramp, at 1 bar, or at 3 bar (using the added pressure gauge on the pump output), then going on springs; in these cases, I am leaving the flow until the end, and the total weight in the cup could be even the targeted brew rate of 40g, up to a max of 55g;

I just pick up the scale with the cup on it and pull it out of the way of the stream. If you place the cup towards the edge of the scale you can do this without getting a drop on the scale (not that it would matter with the lunar).
