Yep, when we were working on building packages for nitro coffee setups, we found that pure nitrogen is vastly preferred over beer gas for coffee. I've not used proper beer gas myself, but I have tried mixing CO2 and N2 in a whipping siphon to charge cold coffee, and the extra carbonation had a pretty harsh acidic effect on the coffee flavor. That's not to say you couldn't account for it by adding a sweetener of some kind, but there is an obvious flavor change that may not be considered desirable. I have read and heard that beer gas will make for a larger/thicker head, which might be something to consider as well, but our results with pure nitrogen have always been good enough.

I brew two one-liter batches using Hario Mizudashi Coffee Pot, letting it sit for 24 hours at room temperature.

Joe "chococar" very cool setup (pardon the pun) Have a friend that's into some high end beer making at home and has a lot of the hardware required.

Wow, I love cold brew coffee. Personally, I make cold brew coffee with my Ecooe French Press. I know I am not specialist, but it's a good way to make cold brew coffee at home.
