Well, guys, looks like it's going to be the Pharos, paired with Marlon's Musica eventually. Titan-ish grinder, above entry-level HX machine, and accessories, all inside $1600... I sort of feel like I'm getting away with murder here. Fortunately, I do have a high tolerance for fiddling; I'm currently spending 15 minutes grinding my Aeropress dose on my wobbly Skerton, so even the Pharos is going to be a reduction in overall time spent.

Anyway, it looks like I've found myself a great community. Thanks to all of you for all your help and information, and for taking the time to address all my concerns!

Who knows.. one of these days you might even have a virtuoso so you don't have to hand grind for aeropress anymore!... :D
I drink two shots before I drink two shots, then I drink two more....

I use a Hario manual burr grinder. Excellent grind and very precise on grind size.
