The food friendly burrs were slightly heavier than the OEM Mazzer burrs which means they are more than likely steel (or steel alloy) not titanium which would be much lighter.

I bought 2 sets marked food friendly. One from Stefano the second set off of ebay for half the cost of the first set. Both were identical. Not too pleased but I figured to average the price of both together and have a second set of new burrs for future replacement

There wouldn't be a real benefit to machine burrs in a titanium alloy.
The material costs more than 20 x of the hardened steel burrs, machining tools would also make the price sky high with the end result that the burrs wear much quicker than the hardened steel burrs.

The only difference I see is the depth of the facets (not as in deep but as in cut closer to the center of the burr).
