So the coffee is at least a week old, hmm. Any chance the upper burr was damaged by a rock?African coffees, ya know. Can you inspect it?
It sounds like a burr problem. Last thing, Check to see if the burr carrier looks OK. I can't quite remember what my Vario looked like, as I have a Forte which is a metal assembly. The Preciso had a plastic one which I had to replace once. The replacement was an upgrade, and I had no further issues.

Going to send it to Baratza since it's under warranty and their curious what else could be wrong, really odd. Literally worked flawlessly till all of a sudden... Been busy so pry ship it out tomorrow or Sat, played with it a few more times and just won't extract well.
