Hi everyone thank you for all the suggestions. After seeing ravcos's reply I decided to use a sieve as well to get a better idea of the grind size I was getting at each setting. After doing some experimenting I've found that indeed a grind setting of around 1 turn from zero gives me the size I usually start with when I use a V60. I think I was getting thrown off by all the smaller particles that are produced. After sieving I found that I ended up with about 2 grams of "fine" particles for every 3 grams of my "target" particle size. This ratio held pretty consistently over the 4 different grind settings I measured. In addition, the size of the "target" particle size seemed pretty even so I don't think there is a problem with the grinder. I think I'll experiment with some different V60 techniques and see if I can improve my luck.

And randyh I originally bought the Pharos for espresso, but the machine I'm hoping to get (Bezzera Strega) is unfortunately still out of stock on 1st-line.
