So, I finally made it back to the roaster today to test out the drum speed theory.

Very happy to report that I was able to *completely* resolve the issue by dropping RPMs down into the 50-55 range (20-25 on my drum speed dial), as recommended by both Steve and Johnny. I only had time for one roast, but in its latter stages, I pushed the fan to 50 (again, my lowest setting is 39, but to date I had not made it past 43 without encountering the "bean sucking" issue). Not a single bean in either the chaff collector or the exhaust pipe post roast.

I can also verify that, at those RPMs, I was getting what to my eye seemed a 45 degree slope/tumble of beans through the sight glass, as recommended by Dave.
