You only need BT on a Quest M3 IMHO. Having said that, mine also has MET, using EricS' little drilled out hex screw thingie way up high in the machine. I have the original analogue thermometer in the ET hole and never pay it any attention. Once I find the wayward cap screw supplied with the Quest I'll probably pull it out and block the hole.
One needs the BT for obvious reasons. The reason you might want the MET probe too, is that it responds quickly to changes you make in the fan and the heater controls...also opening the charging port to cut the fan to zero on unmodified M3 MK-IIs.

I use artisan on Mac with Quest. I used EricS thermocouples connected to Mac using a Phidget.

EricS thermocouples are pricey but the work is done. Note that one of my connectors must have been loose as the wires were loose and caused some problems. I hacked it back together. probably Omega's fault - the brand of connector.
BT necessary for measuring bean temp. MET probably helpful if I was more experienced. Not necessary though. I also have analogue gauge I ignore.
Someone mentioned "riding controls" to get a profile. Bear in mind that a set it and forget it style may avoid problems such as stalling, baking, etc. that you might get if you are active on the power and fan. There is a lag between control changes and what happens in the roaster and what you see in Artisan. If you put enough energy into the roaster at the start, you won't need to increase power during the roast and you can maintain a continually declining rate of rise in your BT.
If you set things up at the start with enough preheat and right dose size, you just watch the roast unfold with a lovely Nike swoop curve and you don't change anything except maybe nudge down power post 1C near the end if you roast light as I do.
I spraypainted my drum flat black with BBQ paint to aid energy transfer and I regularly do 250gm roasts dropping around 425F or less for a sweet roast with lively acidity.
