Is there a Golden Rule for batch size?
80% is a useful number as manufacturers often overstate the capacity their roaster can offer useful control over... this will relate to the heat source also. Have you attempted somewhere between 150 and 227? i.e. the recommended max 200g?

What grind for a Moka Pot with light roast
I love light roasts in the Moka Pot; agree with advice to experiment. I've had excellent results with very short espresso ratio brews to standard 1:16 filter brews

Monolith Conical vs Gotham Degrees North...
There are other types, not in common specialty coffee usage like the "crusher" burrs... but my reading is that the emphasis is on both types of burrs... Chemists claim cold brew not less acidic
If there's any difference for reflux, it's probably with regard to smooth muscle activation/relaxation and associated oesophageal sphincter leakage. So, a different compound than acidity.
