Old Baby Gaggia Boiler Replacement
That looks like the old style boiler that is going to be near impossible to find a replacement. Your boiler looks a little like the boiler in the Old White Coffee with steam knob on the front - but not exactly like and I wouldn't want to assume they are interchangeable. But I have three of those

What is the advantage of an in-tank overpressure hose?

Bottomless vs. double spout flavor?
There will be a couple of temp differences as well. One is that the coffee in your cup will be a little cooler with a spout than with bottomless. And coffee absolutely tastes different as it cools (to my tongue it tastes better as it cools - or at least I can detect the flavors better

Why does this dialing in advice work?
I certainly don't have the answer - but it's a question I wonder about a lot. My suspicion is that it is how thick the coffee puck - a slightly longer path thru the coffee for the hot water to take. But then you also ground more coarse to keep the flow rate the same - so

What makes milk 'bad' or difficult to properly froth?
when you get the "uncontrollable bubbles" are you sure that the pitcher is absolutely clean? Could it be some bit of detergent residue in the pitcher from when you washed it?
