The problem is that your shot is running too fast. You are too focused on temperature and that has distracted you from way more important factors. Grind finer and slow your shot down and you won't see that temp drop. Even better , use a scale and Aim for 2:1 ratio in about 35 seconds

Can't make a good tasting espresso shot
My first inclination would be the beans. And it's a very easy variable to change. Some high quality beans will have a taste that someone people would describe as sour, even when pulled properly. You may prefer a darker roast or something less acidity or fruity tasting

Profitec Pro 500 PID no flushing?
It's not that difficult once you get it, and will depend on if you are doing a flush and wait, or a flush and go. The group head works to fine tune your water temp. either cool it down, or heat it up. The important thing to keep in mind is that the thermometer reads the group

The brew parameters on social are pretty general and arbitrary. Rather pointless IMO. Pilot certainly puts much more thought and precision into their brew guide. They usually go into detail,on tasting notes as well

HX flushing has never bothered me. Another benefit to flushing is that you are always drinking fresh water and not water that has been sitting in a brew boiler for many hours
