Mahlkonig Peak vs. Versalab M3
I also have a Versalab M3. I have noticed that darker roasts do have more volume per gram. Make sense considering the darker roast have more time under heat and losing moisture, etc. The Peet's Espresso in your shot looks very dark, so the 21 gram dose is likely overfilling a lot more in comparison ...

Conical burrs or flat burrs for separation of flavors on light roast?

Leaky La Marzocco GS3 Steam Boiler Drain Valve
I bought one of the first batches of GS3's, so it's 4 years old or more. I don't keep it on 24x7. I know people have mentioned it's best for the machine, but since I'm not here 24x7, I don't trust the machine to always operate properly.
