Do you have a an idea how that relates to temperature? Is the sensation of bitter and sour influenced by temperature? A related observation perhaps is that salt reduces the sensation of bitterness

I would look at your grinder too. Even with Lavazza, Illy, Segafredo etc. you should be able to avoid a watery taste and get lots of crema. Some of the Lavazzas are real crema bombs. I'm also surprised that you use the expression "comfort-style". Are you referring to Italian espresso? I've had more that one in Italy that I wouldn't describe as "comfort-style" (with all that Robusta in the blend ... )
