Quest M3 : time between roasts

Quest M3S Thermocouples
I sent a PM with a link. I have them mounted in a drilled allen-head bolt with an inelegant stuffing of foil for insulation as the hole is 3mm or so. The braided stainless steel wire is held in place with twist ties. I don't find them too noisy, but you can judge for yourself. Here's a recent roast.

Odd (maybe) observations on thermocouples - Arduino, TC4Plus, Max6675
I've noticed some similar things. I use extra grounding connections between my thermocouple shielding, my roaster, and my Arduino/TC4 -- or now on my esp32. Things are running fairly smoothly for me, but I'm also investigating galvanic isolation, like discussed in the following video. {video}

Similar curves, but different results
The more I roast, the more I realize how much all the little stuff matters. I too have a small electric drum roaster, Quest M3 in my case. When I look at your curves, I see them as very different. Or, to say it another way, they are the same or very similar only at the charge temperature and
