Sorry, hope it's not too late to respond to your questions. I've only ordered Classic and Analog. 7 days post roast seems to work for me. It does get more of that chocolate note with time, say 12 to 15 days post roast

Your MFlat is not an MC2 ( the C designation is for conical burrs). I think you have a first gen MFlat...an excellent grinder. As for the burrs, they look like SSP red speed
