How to pull Counter Culture "Big Trouble" (aka formerly Toscano)?
Nice I would also consider getting a 20g VST basket if you like punchy shots, that will also work well in milk based drinks. I find the standard double basket works well for smaller (15-16g) shots that tend to be more mellow tasting. Keep in mind the 16g in, 16g out is just one idea

Favorite Dark Oily Espresso Blends
Most of the truly dark and oily coffee I've had tasted a bit burned or even rancid to me... have you had some you liked? Which well known roasts didn't you like? Non-fruity, I'm a big fan of blue bottle "17ft". Not super dark, but for me it's a perfect "espresso" tasting espresso. YMMV

I'm not very familiar with this coffee, but I have the same machine. I would weigh your output, and go more ristretto. Try 16g in, 16g out in 30 seconds total time, including the e61 preinfusion time. If that doesn't help, I would try grinding finer, and doing a 15s manual pre-infusion by moving the...
