Bonavita Water Kettle: What brew temperature do you use?
My thinking is that there are a lot of variables that are hard to control with brewing temperature. Reducing drying time on Huky 500T
In my experience I get a more developed acidity with a higher charge temp (425-450), cranking up the gas sooner (@30 secs) and keeping the airflow ultra low until turn around. Question to Huky users - why ET line and BT line differ insignificantly
I suggest some airflow when you are warming up the roaster. I preheat with just a little bit of fan. I use a fan controller and have the knob turned all the way down but you could use the exhaust damper too. I usually see my ET slightly higher than BT when empty. When roasting my ET will turn around

General question about BT ROR
Those look like very dark roasts. There's no real goal with ROR necessarily. Think of it as how fast your roast is accelerating or decelerating like a speedometer. Have you tried dropping at the end of first crack before your ROR increases again? It might be worth a try
