Dialing in new Mahlkonig EK 43S for espresso

Quest M3 - driving the roast with MET
I keep my airflow at 100% the whole time. It removes a variable. The Quest is a relatively low airflow unit. I've found most of the roasters I respect actually tend to use fixed airflow thru the whole roast. Also, I'm not afraid of a 600f MET, but I don't usually hit that while doing 120g batch sizes

Goat Story - Gina Brewer
I hate Chemex, but I loved a Geisha that La Cabra served me in this brewer. Possible that they fixed a lot of the issues with Chemex's extraction. Price point kinda brushed me the wrong way. I'll stick with my V60
