Dialing in new Mahlkonig EK 43S for espresso

Quest M3 - driving the roast with MET

I keep my airflow at 100% the whole time. It removes a variable. The Quest is a relatively low airflow unit. I've found most of the roasters I respect actually tend to use fixed airflow thru the whole roast. Also, I'm not afraid of a 600f MET, but I don't usually hit that while doing 120g batch sizes

Beans usually get me 70-80% of the way there. The coffee I enjoy most comes from Drop, Wendelboe, Koppi and April (and me ). Over the years, I've learned to evaluate coffee very quickly and become a good judge of its character. Cupping bowls work wonders for me and give me an accurate representation...

Goat Story - Gina Brewer
