1. As already mentioned you won't need 9 bar pressure for a great espresso 2. But if you insist... it doesn't need superhuman power to achieve 9 bar pressure with one hand but surely more comfortable/controlled if you do it with both hands (see video). {video}{image}

Also very interesting is the difference between a fully filled boiler (700g water) and a boiler at the lower limit (400g). {image} The reference boiler temp/pressure profiles (grey) are the ones with the lower (400g) fill!!! The red/orange ones are with the boiler filled up to the upper limit (700g)...
