Bubbles in drip/filter coffee

Whenever I get a drip coffee or pour over from a cafe, it usually has some light bubbles that linger well after pouring. It seems like the coffee is thicker somehow. What is this and why don't I get this nearly as much at home using pour over and also high quality coffees? {image}
