I own a single group version of what you have. Installed a pid a couple years ago and it has been running better than ever. I can only think of two items that could be causing this. Since the water level looked good then the right tube when looking at the machine is blocked or the group head is. There is a little stopper and spring in the group that could be preventing flow due to scale

This doesn't line up with what I remember and what eassoparts and the manual show. The w seal is on the bottom to seal the water from exiting the group when closed and to apply pressure and the top is a v gasket facing down to prevent water leaking from the top of the group

Fixing the boiler gauge will go a long way and you will need it anyhow. My only other thought is that there is a spring check valve in the group. Start with fixing the gauge and I would order up more seals since they will need to be replaced annually. Include the shower screen in your order as

Does it stream water like it would out of the hot water tap? I wouldn't mess with the water level sensor till you have check out the more obvious. Like the piston seals. I have a classe 7 leva which is the same machine:) If you need any tips or tricks just send me a pm

Flushing has nothing to do with shot volume but that is correct that it probably is a 1oz shot volume machine. This is where the use of double pulling the shot comes in to get more volume. The 1.5oz you are seeing is with crema correct? Depending on the bean this will throw off what you are seeing

IMS Shower Screen Compatibility with Lever Groups
It doesn't look like it is held on the same way but that doesn't mean it won't work. The group gasket might be enough to hold it on there or a couple dimples on the side. I have no complaints with the stock one though. What issues do you have with it?
