RO water creates oxidation??? per a seller.

It's true. You need to add stuff to those waters. Add the 'wrong' stuff and some machines might be more affected than others, e.g., "Lelit Bianca, particles forming in boiler (rpavlis water)"

Huky IR burner issue

I cleaned the burner assembly inside and out thoroughly, but haven't gone through the regulator. I guess that's next. Thanks!

Assume you checked all your connections, tank, bad regulator, etc? Could it possibly be a clog or needle valve needing cleaning? Marcel may eventually chime in too; he had a cracked ceramic stove after many years of use. I don't use the switch on the side in regular practice, and leave it on the setting that uses

It just struck me as strange that one of the top 3 or so retailers of espresso stuff in the conus would say that. I just checked another of that seller's machines and saw (under "Notes") the same warning, so I assume it is posted for all machines

Clumpy crema

Interesting thought about the extraction water being to hot. I did just start running a "heat exchanger cool down flush" before my shots. This could have contributed to my successful shot. So in summary the only things that changed were:
  • Beans outgassed a few more days
  • Started doing a "Heat exchange cool down flush" see:

Deeper cleaning - didn't change anything. I'm still at square one

    Clumpy crema

UPDATE: I think my beans were too fresh. Just pulled a beautiful shot (no clumpy crema) and poured some great latte art
