That looks like you're overextracting and maybe not stopping extraction soon enough. I would grind coarser. You also should be able to let it flow without timing it, and yes, you can turn down the heat near the end but be sure to completely stop the brew before it is bubbling out the chimney

I don't know anything about white coffee, but if that's the answer then what's with the orange color? Is this one of those "is the dress blue and black or white and gold" things?

I do this more with wine than with coffee, but I'll take the same approach. As it's brewing it has all the aromatics I love,.. warm, hazelnut, dark chocolate. But when we taste, though it's lovely and not actually that bad at all, there is a tannic dryness. I don't get bitter or sour but a bit of an astringent

If one is not a metrologist, the 'fiction' can be close enough to the truth. Once one has their machine under their fingers and is primarily interested in making fine espresso, knowing the exact group temperature is irrelevant. Either the espresso is stellar or it ain't. Make changes if it ain't. Don't get caught up in measuring more

I would have expected that white coffee would be ground prior to brewing. Apparently it isn't a good idea to grind white coffee in a normal grinder which might help to explain the photo.
