Thanks for bringing it up. I'll talk about the rear end grind adjustment in the ergonomics post coming in the next few days. The short of it is that the knob-thingie on the rear is purely decorative. There are popular recipes that go down to 70C at the end pours or even lower for the bloom. This is one area where the Aiden really stands out so unless you're concerned about the inevitable user error complaints perhaps it's good to let the customers experiment?

Humidity sensor on exhaust - other gas sensors ?
Got it. Interested in suggestions for other entry points. I think two key challenges are: negative air pressure in the roasting chamber and avoiding the combustion byproducts from the gas heater. Replace the BT probe with a combined tube/thermocouple? Go in through the hopper or exit chute? Just drill a hole?

Thanks for the idea. So, are you saying either the original low speed "Drum Motor - Standard Speed - 8/16 RPM @$29.95" or newer "Drum Motor - High Speed - 16/32 RPM @49.95" will work as a replacement on the original 1600 without swapping the control and power board included in the "1600 or 1600 Plus version Upgrade Kit @$129"?
