This machine has a pid controller, not a pstat. How can I change the settings? And how it can explain the differences between my apartment and the shop?

none of the options. I'm not sure about the pump, but don't think so. But there is always voice of the boiler heating up before the explosion

It sounds like its the steam boiler's pressure relief valve opening up to release excess pressure. I"m assuming this as it seems like your boiler didn't necessarily "explode" as its still functional. Not sure how the pressure in your machine is monitored and controlled. The pressure set by the pressure controller (or PSTAT) and the setting of the

Has my brew pressure gauge lost its mind?
Well, you could remove the gauge's pipette from the tee fitting to accurately see what it is pointing to when at atmospheric pressure. If you can get the face off of the gauge you could pluck and then set the pin back on pointing to zero so that the needle is pointing to actual pressures rather than pressures 7.5 bar

Gaggia Classic pulling too slowly
I'd always suspect the pump if a vibe pump is more than 7 years old and I wasn't able to test its flow against 10 Bar backpressure. Do you have any way of testing the pressure in the system, like one of those portafilter gauges or anything? (I still suspect the pump, but I'm biased)

Moving from Mignon Specialita to Ceado e37s or Atom 75
I have had the Atom 75 as my first "real" grinder for 3 years. I make about 6 shots of espresso per day with it. If you want to slide the grinder on your countertops, many here have posted on various flat items to put under the grinder, allowing for easy sliding action. Ideally there should be

La Nuova Era Cuadra - pump continuously working
Where is the water going? Is it overfilling the boiler? If so, check and clean the probe. Is it going over the OPV and back to reservoir? If so, the first guess should be a blocked "Boiler Fill Valve" preventing the boiler from filling to the level of the probe, thus the pump runs whenever the machine
