I agree with what previous posters said. Adjust your flow one one of two ways, by upping your dose (ie using more grounds) or by grinding them finer. Additionally, while most baristas try not to vary their tamping pressure from shot to shot, the plastic tamp that came with your machine probably isn't capable of producing the pressure needed to

La Marzocco GS3 - Excessive Water Consumption

Having had both HX and DB machines (among others), my advice is to go with the thermometer at least until you're fully familiar with the flushing requirements of your particular HX. Maybe then switch over to a manometer. I know of no adapter that will permit both
