Funny enough I'm in the same situation. I got good shots using my Vario with the ceramic burrs, but now that I have a Niche, the Vario is outfitted with steel burrs again just for filter brews. Niche Zero spares not available in Europe?

Can you use a freight forwarder? Not sure of the situation in Europe, but for a long time us Aussie's had to use freight forwarders to get things out of the US.

Can a short post-shot flush cause thermosyphon stall on non-HX E61 machines?

I don't see any logical reason why a flush should cause thermosyphon stall, if everything is in good shape. Flush time depend by the thermosyphon design, if the machine has or not restrictor, how is the temperature controlled ( PID or P-stat) etc etc, so the best way to realize the proper flush time is probably to install a group...
