Sorry, my wording was bad (English is not my native language). I meant that in your case you do have a very high quality grinder, which helps with the consistency, but if someone does not have such an endgame grinder then preinfusion might be even more important when it comes to consistency

Thanks for your post. Yeah, the thing is I've been letting taste be my guide since the mid-90s with BIalettis but the thing is that my philosophy has always been that with certain time honoured things, there is a way to do it. And it's pretty universally accepted that my never filling the basket was an evident "not the way"

One other point. ALL espresso MACHINES HAVE PREINFUSION. Preinfusion has somehow become some sort of mystic 'feature' when the reality is every single machine has it. You think the Key is not an 'extremely high quality grinder?' I've owned Monolith Flat and Monolith Max. I choose to own a Key because it's the best grinder I've ever owned. Not sure I understand what you're implying?

Thanks all for the hints and suggestions. I tried to use slightly cooler water (90 - 88 degrees Celsius) and finer grind (around 4) and the cup was definitively better, therefore I will try to stick to this pattern and seek improvements. About the quality and price tag, for sure there will be better beans, but I am not

You can store coffee in your fridge to extend its life by quite a lot. For example, the oldest roasted coffee in my refrigerator is coming up to a year old. However, unlike storing in a deep freezer, the coffee will still age appreciably, just much slower than coffee stored at room temperature
