1 hole versus 3/4 hole steam wand?
Yes! This is one reason I prefer rotary valves over joystick valves. After having had both, I like to be able to dial the steam back as I please. Ditto, for the hot water. Sometimes I just want it to dribble out, but joysticks tend to be full on or full off

Yes, safety lever ordered. Would happily abandon the safety at this point and become one of the "No problem if you use it properly..." people. If it's this hard to get right, it might be more trouble than it's worth down the road

What will be the next big breakthrough in espresso?
I would say leave the AI/ML garbage out of the equation. I have always considered espresso to be like roasting in that it's 1/3 skill, 1/3 science and 1/3 art form. Trying to automate the process and remove the hands on skill then it becomes just another boring automated joke. Those that want to rely on AI might be brain
