Is Heat Exchanger Temperature Stability Really That Bad?
I find the added variability of dynamic weather patterns (in a 4-season locale) + atmospheric changes to be even more intriguing. Both affect the fineness of grind and shot yield in my ~10 years of mucking around with this stuff

Bezzera Strega: Grouphead "Air Lock"
I have an old Bezzera Strega. Recently, when I make the first espresso shot everything goes fine. That makes it sound like a great option for me. I would rather have a grinder that is good for espresso and just ok for pour over. I am more willing to compromise my pour over than my espresso. I would even be willing to grind a bunch for pour over at home before leaving on a trip and only

Right out of the box the dial was perfect for the Flair, I had to go a notch or two finer for the Profitec. I didn't have any problems with the steps, especially when at the price I expected a fair amount of compromise

Advice on downgrading Behmor 2000ab to Whirley Pop
100% is 5, 75% is 4, etc. down to 0% is 1. I am running 12 oz at 100% and monitoring the temperature to keep from having it shut off at 330, so any time it hits 320 I drop to 75%. I run two batches back to back, since my coffee tin holds the results nicely
