Moving from Mignon Specialita to Ceado e37s or Atom 75

Moving from Mignon Specialita to Ceado e37s or Atom 75

The Atom 75 burrs, if "Mythos-like" in your market, are a step up from the 55 mm Eureka burrs. The Mythos burrs were considered to be top-notch burrs for traditional espresso. Filtered coffee looks greasy oily

Hello! I just roasted a new Colombia Huila. Is it a defect that when brew it filtered on Chemex it looks oily on surface ? Attached a picture. Thank you!
