Differences between Ww core 80mm and Ssp 83mm HU in espresso
Others may disagree but when I had fully seasoned 83HU in a DF83, my feeling was that they were better for longer ratios and faster pulls. I know this sounds more MP like than HU but this is my experience with them. It's actually not that surprising if you look at the 83HU vs 83MP grind distribution graphs.

Humidity sensor on exhaust - other gas sensors ?
I can take a photo and measurements for 3D modeling, but we should also compare my trier to Eddie's. A spare part of a North or Mill City roaster could be hard to obtain without a special order from the manufacturer. An alternative is to find a pipe that fits the insert. Do you have a rusted siphon tube? Also, BTW, if you do lots of descaling, that doesn't necessarily clean coffee oils in tight and remote places

Izzo Alex Duetto 3 - help with wet steam and low pressure
Yes, that is the probe. If it were me personally, I wouldn't start with removing the probe as that is likely to make you need to put a new one in. I think quantifying how wet your steam as a first point would be helpful - how much water is added when you steam a pitcher of milk?

Thanks for the tip! I changed the small o-ring which resolved the problem. I was about to buy $120 probe replacements from ebay but a $7 o rings fixed the issue
