I'm wondering... are these beans just not capable of producing good coffee in a Moka pot? I'm getting to the point of wondering whether I even like coffee anymore

For your purposes cold brew may be best. Otherwise, you'll only become increasingly frustrated if you don't adjust your parameters to what is optimal for a particular brewer. I'll post here if I get a good dark roast 6 cup moka pot brew using my Bialetti

I'm not gonna fill the boiler less because if I have to get less actual coffee than what a 6-cup Moka pot can produce then this isn't the right vessel for the drink I want. I'm already making less physical coffee than we want. And I can't reasonably get more coarse than this. I just did it again with

Domobar Jr Hx Temperatures
I got the thermometer installed. Pretty good. Just vaguely trying to characterize the behavior relative to the brew temp setting, with no water flowing through the group head, the setting is pretty well correlated to the reading on the thermometer. I know this isn't ideal, but I figure it should give a reasonable representation of the temperature inside the

Helpful photo. Go by taste. If it's still tasting overextracted, try grinding even coarser and/or filling the boiler less to reduce the brewing heat, per the James Hoffman video. You don't want to exceed 80C at any point
