Hopper fed grinder
I'd second the Eureka Specialita. It has a ton of great stuff going for it. You can also get it in the grind by weight model, Libra

Shot inconsistencies with SSP Cast LS
I have the exact same setup and am trying to learn here. What does "run out" mean and how is it measured? And how do you test the bottom burr alignment (and re-align it as well?) using tape?

Upgrading to a temperature stable espresso machine that can go back-to-back seamlessly.

Saturated group & PID controller, one of the best. I would suggest the Idromatic version with some custom options to make it a virtual one of a kind

ACS lever safety system
In hindsight it may be the "sleeve" around the group that needs to be full of water, not the group itself. In the first video above he runs a lot of water through the group before releasing the lever. I am sure that DaveC will confirm at some stage

Latte Art Diagnosis
Up until the point you reach the middle of the cup, you are doing a great job. Here's a screen shot from one of your videos, and it truly looks great. The pattern is forming in nice wide open leaves. {image} But then moments later the flow becomes too thick and the pattern gets squashed.
