Hello :D

The forums hold much discussion regarding a PID on a HX but I understand that discussion is mostly about the more popular "Mixer" type HX's. But what about the Dragons?
HB wrote:Dragon - key characteristics are lots of flash boiling, fast recovery, nearly zero thermal memory, and slowly rising brew temperature profile. Simply stated, after the cooling flush, the heat exchanger output is the brew temperature. Examples include the Elektra Semiautomatica, Bezzera BZ07, and the Olympia Maximatic.
As such my Rancilio EPOCA S1 is a dragon. I would only PID it if the PIDing could result in a fixed offset between the boiler and brew tempratures even if a small but fixed flush is required. Since dragons are not common around here I would appreciate just relevant related thoughts.
