Victoria Arduino Adonis temperature calibration and service

New guy here and first post. I have just purchased a lightly used Victoria Arduino Adonis for a coffee bar that I will be building in the future. I am going over it with a fine tooth comb. I hope to hear from guys/technicians familiar with this machine or other Simonelli's.

1. What is the best way to check temp? Temp prob in water stream, check water in cup, temp gun?

2. I hope to hear from someone familiar with this machine. I have thoroughly cleaned it and components multiple times. Zero leaks or error messages. I have changed the group head components gaskets, ect. What other items should be checked, serviced or overhauled?

Those tools would definitely do the job. Is there another way to check it more economically?

More economical is the classic styrofoam cup test. I normally dont think economical when I think Victoria Arduino :P
