Hello Again...
This is fascinating...but I regret to admit that I am banished to a less than perfect cuppa if that's what it takes. I simply don't have it in me.
That being said...I've been pulling some extraordinarily delicious shots lately. And...I'm very happy.

Hi David
How did you get on?
Instead of using the methods as described by Howard, air/fan, I use a cold/wet cloth and apply it to the grouphead to drop the group temperature. It is very effective. No long flushes required. Let the temperature regain to 90.5, 5 second flush, pull the shot. You will soon get into your own routine. Credit to Howard Smith for doing the work.

I must admit that I'm not ready for this element of creating the best espresso with my Appartamento. Still focusing on grind, time, dose.
