You are correct. I did try to calibrate the temp offset on my brew boiler. That's about as far as I went.

I know you have a water specialist.
Can I use distilled water + NaHCO3 40 mg / l?
answer:
in our opinion, it's better if you use 80 mg/l instead of 40.

In regards to this, do we also need to add Magnesium Sulfate?

Further a matter of taste. Many people write that magnesium improves the taste of coffee. But this is not a fact :)
Magnesium is one of the causes of scale, and that's for sure.

Distilled water gives coffee a good taste.
But the sensors need minerals to work. KHCO3 and
NaHCO3 is non-corrosive, but an extra dose spoils the taste.
Look for balance (and who is easy now? :) )

I see thanks.

I'll receive my Bianca tomorrow and sceptical of adding magnesium to the solution as I've read it can be a bit corrosive.

Guyver, if you are in Sydney then I assume you bought from JB.
I'd ask them and then check in with Bombora re filters/water.
I'm in Melbourne but went through those NSW based businesses.

Bought a Bianca today - production date is April 2021.

It comes with IMS co-branded baskets, and doesn't seem to have the boiler/PID issue (hopefully it stays that way!)

Now to learn how to pull shots and steam milk!!!

(first two shots were not very good, but coffee was pretty old and the coffee it was delivered with was roasted yesterday, so a little too new...)

What is the boiler / PID issue?
See: Lelit Bianca - Steam Boiler Over Pressurized

More generally: Boiler PID Sensor Problems with 3rd Wave Water

It is reportedly not unique to Bianca, but there are several instances of it occurring with Biancas.
