How to unscrew E61 stainless steel mushroom?

I find that the structure is different from original one

I just did this recently on my E61 machine and I don't know what exactly I'm looking at on yours. I followed this video roughly:
What part did you unscrew here? There are two screws on top, on to remove the mushroom and one to take the mushroom apart. The whole mushroom should come out attached to the big screw.

Might also help to know what machine you are working with here.

U can see the head is different, when I unscrew the big screw, the head will be removed independently

That first image shows an internal hex to remove the mushroom. You'll need to measure across the flats and get yourself a hex key that fits. Tough to judge from a photo, but given the typical group cap has 16mm internal threads, I'd wager that its between 14mm and 17mm.

I have bought a internal hex 14mm to unscrew it

I can take it out and check the situation about the group head now :D

Huh, interesting. Is this an older version of an E61? Have never seen one like this before!

Newer version, similar to one from ECM Germany. I think they got a German patent in 2015. https://www.ecm.de/en/ecm/premium-technology/

My version is different to that ecm one

It contain two part, the cap, and then the bottom part.

There are smaller thread under the big thread on the Ecm one
