I'd like to really get my head around PID technology and the like.

Anywhere I can read up on it - starting easy and going into lots of detail would be good!

Thank you!

In terms of espresso technology, a simplified definition of PID = an electronic brew temperature controller. There's tons of information on proportional integral derivative controls (PID). Below are a few introductions:
  • What is PID - short and sweet, not overly technical.
  • PID controller - Wikipedia's definition. More technical, a little more on the mathematics. A number of good links to more information.
The subject of PID'ing Silvia is well worn on CG, alt.coffee, and of course "PID" is mentioned frequently on HB. Below is a small sample:
By the way, I got better quality search results on google from "proportional derivative controller" rather than "PID."

:D Thanks, I skimmed these and will study them closely later. You always seem to have the needed information right on your finger tips. Posting this in FAQ would help as there must be others with the same question.

To the above list, I would add Tim Wescott's article for Embedded Design magazine, PID Without a PhD.
