Flow stoppage after changing gliceurs

Hi all. I'm having some trouble with my Appia II.

I wanted to reduce the flow a little so I bought 0.5 Gliceurs to replace the stock ones that are 0.8.

But now I have a problem. The flow to of the group starts well, but then it chokes because of built up steam pressure in the group. Once there's enough water flow starts nicely again. Video:
So here's what I ask:

The flow restrictor I changed controls the input of hot water or cold water? Would I benefit from changing the one in the group head too?

Could this damage my machine? I'm using it in the coffee shop I work at. So this is the part that worries me most.

Any help would be appreciated.
