I have the same issue on a V5 with an Auber PID. My workaround is to use the steam button at 200f indicated to speed up the heating from Auber's intermittent pulsing to regulate the temperature. I hit the brew button at 217f and it keeps the temperature around 213-215f indicated. Not perfect but it works for me.
