Revisiting Klatch Belle at reduced temperatures

It has been many months since I ordered Klatch coffee and I'm having a really good experience with the latest batch of the Belle espresso. I think it has something to do with dropping the temp down to 194F to tame the roastiness and allow the sweeter flavors to come through.

Incidentally, their El Salvador Las Mercedes Pacamara is good as espresso 2:1 even though not expressly packaged for espresso prep method.
