Light roasted coffee beans in grinder

I mostly brew Sey coffee, having a subscription. Almost every time I grind beans I hear signs that a bean or two is stuck on the burrs for a second or two, and often the next day I can hear a piece of bean is still stuck. This happen almost every grind of Sey coffee, but other roaster's coffee does not.

What is it about light roasted coffee that does that?

The beans are harder than darker roasts. Within reason, the darker the roast, the more the cell structure breaks down, even long before you get to charcoal.
