Drinking carbonated water masks sourness?

Have some beans that pretty reliably make sour espresso, but am finding that drinking some plain soda water first seems to mask the sourness. Anyone else noticed this? Am using a soda stream and it's the carbonation that is needed for this effect. Something to do with the carbonic acid from the dissolved CO2 perhaps?

I love my soda stream! why not try some better coffee? perhaps Lavazza if your ok with commercial roasters.
